Anyone who knows me well, knows I love food. It's sometimes a struggle to keep my weight in check,
especially given that my favorite foods aren't always the healthiest things. As my family is from
Arkansas and Louisiana, many of the family recipes are high in fat. For example, want to cook some
squash? Better haul out the bacon drippings. Want some peas? Better get the salt pork. You get the
idea.
Below are a collection of recipes. Some are family recipes, some are my own. Some originally came
from books but have been modified to suit my taste. I rarely do anything straight from a recipe. I have
a good sense of how I like my food and tend to change recipes to that end. My own recipes tend to
be a bit on the odd side and I will sometimes mix various types of foods together. For example, chicken
with tomatos and basil, which is somewhat Italian, but topped with a cucumber/dill/yogurt sauce, which is
somewhat of Indian origin. But such are my tastes.
Anyway, if you're adventurous, give some of them a try. I've only included my favorites, and I think
that each one of these is an exceptional dish.
